    FETTUCINE

    50/50 AP to SEMOLINA Flour
    2:1 Egg Yolk to Egg White
    Pinch of salt
    Dash of water, as needed

    SAUCE

    Beschamel of reduced Heavy Cream and Onion studded w/clove

    -Pulsed in food processor
    Fresh basil
    Fresh garlic
    Grated Parmesan
    Fresh ground black pepper
    EVOO
    Pistachios – shelled
    Pinch of Kosher Salt

    Carmelize Chopped shallot and pancetta, boiled and drained pasta, folded pesto into beschamel. Combined pasta with 2/3 of sauce, pancetta, and some reserved pasta water. Plate and sprinkle with crushed roasted Pistachios and Parmesan
