serves 4
400g rich egg dough
For the filling:
350g/12 1/3oz potatoes, peeled
1/2 bunch of mint, stalk and leaves separated
40g/1.5oz pecorino cheese, grated, plus extra to serve
fine sea salt
For the sauce:
200g/7oz taleggio
100g/ 3.5 oz craime fraiche
Half bunch parsley, finely chopped
