✍🏽For the Pasta sauce: 1 small red onion 4 cloves garlic, chopped 1 small red bell pepper 250mls/1 cup double cream 125mls/half cup reserved pasta water or chicken stock 1 tsp Paprika 1 tsp Red chilli flakes 1 tsp Mixed herbs 1/2 tsp Pepper 1/2-1 tsp Salt (to taste) 1/2 jar of Sun-dried tomatoes 40g Parmesan or Pecorino (v) 2-3 handfuls Baby spinach
(I used approx 200-250g net weight pasta – didn’t weigh it) – Allow the cream and stock/pasta water to simmer a few mins before adding the spinach or the sauce will be too thin.
