Healthy Lentils Parmigiana Recipe 👩🏼🍳
Ingredients:
2 eggplants
17oz (500ml) passata/strained tomatoes
1 medium onion
2-3 garlic cloves
Chili
4 oz (125g) mozzarella cheese
1 oz (30g) parmesan
1 can (225g/ 8z) brown lentils
Seasoning /salt/ pepper
Instructions:
Prepare like shown in the video.
Baking directions:
— Preheat oven to 200°C / 390°F.
— Bake the greased eggplants for approximately 10 minutes in the oven until golden brown
— Bake the parmigiana for approximately 30 minutes until the cheese is golden brown as well.
