Mmmm… pizza


Life, reddit… life! Started the preferment for this dough on Wednesday, intended to bake Thursday, but… life. Got this in the sheet pan to proof Thursday afternoon and then my wife had to go to the ER (she’s ok now). Wrapped up the sheet and stuffed it in the fridge before we went. Didn’t get a chance to bake until tonight, and it came out ok. Dough is a bit funky, but overall came out good. Oh, also, this was my first run of my new spiral dough hook.

Dough:

850g total, KA sir lancelot high-gluten flour, 65% hydration, 0.7% yeast, 2.3% salt, 2% malt powder, 2% olive oil.

Sauce:

1 can of Don Peppino’s pizza sauce.

Cheese:
50/50 Munster/Monterrey Jack in the middle, Sharp white cheddar on the edges.
