Been making pies in a gozney roccbox for about a year. I’ll make my own dough sometimes, other times I’ll use Trader Joe’s or Whole Foods doughs. Little olive oil in the dough, store bought pizza sauce, low moisture mozzarella, and then typically pepperonis, mushrooms, maybe some other stuff.

My pies are always good but I’d say…bland? Like they are missing whatever special touch that pizza restaurants add. Any ideas?

    A better sauce than store bought would be an easy and noticeable jump in quality.

    Can of peeled san marzano from Costco, remove from juice and put in blender or blending cup. Add a tsp or two of salt to taste, couple dashes of olive oil, a few basil leaves cut to strips, maybe some garlic. Hit with immersion blender or pulse mode on blender a few times to your liking consistency wise. I like to take one part of peeled tomato out of the can and set aside to just kind of crush with my hand and throw in when done, a few not huge chunks here and there burst really nicely with flavor.

    Takes just minutes and boom your pizza is way better

    Some dried oregano and Parmesan sprinkled onto the sauce before you cheese the za is a huge help. Also, if you want store bought sauce, snag some from GFS is you have one. They also have whole milk low moisture mozzarella that is pretty damn good. Making your own dough is gonna be a huge upgrade and it doesn’t take as much effort as you think. Use some semolina.

    I don’t know what kind of cheese you’re using, But I was using costco mozzarella on my pizza for a long time.Then, I switched to a different brand that was whole milk and just had a much better flavor, so better cheese can help. Fermenting your pizza dough overnight can also help add some flavor. If you’re adding toppings like mushrooms or onions, if you saute them to add some color and flavor that can help as well. And last you should probably try to figure out if you want a heavily seasoned sauce or a lightly seasoned sauce to go on your pizza. I would pick one thing at a time to change and go from there.Develop your pizza and see which way you wanna take it.

    Make your own dough. BAM! Next level. Make your own sauce. BAM! Move up another level. Shred your own whole milk low moisture cheese. BAM! Go up another level. Slice your own pepperoni from a stick. BAM! Another level.

    It looks like you are taking the easy way out buying everything already done for you. It will never be as good as doing it yourself. Convenience vs Quality. You choose!

    You didn’t mention using either parmesan or pecorino. A must IMHO
