I haven’t seen my fiancé in two weeks…

And since we’re both back in the city, I figured I’d remind her why she said yes, so I made my take on Marry Me Chicken.

Save this so you’ve got it ready-

Ingredients
1 lb Force of Nature chicken thighs
2 tbsp olive oil
3 cloves garlic (sliced)
1 cup grape tomatoes
⅓ cup sun-dried tomatoes
1–2 cups chicken stock
½ cup Parmigiano Reggiano (optional)
Fresh basil
Pasta (pappardelle preferred)

Tofu Cream (3 ingredients)
8 oz firm tofu
Sun-dried tomatoes
Splash of oil from the jar
Blend till smooth + creamy. That’s it.

Method
Season chicken with salt, then sear in olive oil until golden and caramelised on both sides. Remove and set aside.

In the same pan, add garlic and cook until fragrant. Deglaze with chicken stock, scraping up all the flavour.
Stir in blended tofu cream, loosening with a bit more stock until smooth and silky.

Add grape tomatoes + sun-dried tomatoes, and parm if using.

Return chicken to the pan with basil and simmer until cooked through and sauce thickens.

Cook pasta until al dente, then toss it through the sauce.

Plate pasta, top with chicken, and finish with extra sauce + basil.
