RISOTTO. THIS IS A DISH WE HAD IN SICILY. >> THE RECIPE WAS IN YOUR LUGGAGE. >> TOMATO RISOTTO. WHEN WE WERE ON VACATION IN ITALY, THERE WAS THE MOST DELICIOUS TOMATO RISOTTO WE HAD AT A RESTAURANT. DADDY TOOK A PICTURE OF IT AND

THIS IS MY CREATION OF THIS RECIPE. FIRST THINGS FIRST, WE NEED TO PUT ALL OF THIS CHICKEN BROTH INTO A POT. WE’RE GOING TO USE REGULAR BACON. WHILE THE BACON IS COOKING, WE NEED TO CHOP UP SOME GARLIC AND SOME SHALLOTS. IT’S REALLY COOL.

RIGHT AROUND THE BLOCK FROM OUR APARTMENT, THERE IS THAT GREEN GARBAGE CAN, WHICH EVERYBODY IN THE NEIGHBORHOOD CAN DUMP THEIR COMPOST INTO, SO I DO THAT EVERY DAY BEFORE I PICK YOU UP FROM SCHOOL. SO I THINK WHEN WE ATE THIS IN

ITALY, WE USED SOMETHING CALLED GUANCIALE. SEE, THIS IS A DIFFERENT WAY OF COOKING RICE. WE WILL COOK ALL OF THIS RICE WITH THAT YUMMY BACON FAT AND OLIVE OIL. WE WILL MAKE A HOLE AND SQUIRT IN SOME TOMATO PASTE. NOW THAT THE WINE IS OPEN, I

WILL POUR SOME OF IT. >> I WANT TO POUR IT. >> GO AHEAD. ALL OF IT? >> NOPE, THERE. THE WAY YOU MAKE RISOTTO NOW IS WE WILL LET ALL THE RICE ABSORB THIS WINE. THEN WE ADD A LITTLE BIT OF CHICKEN BROTH.

YOU WANT TO MAKE SURE YOU USE HOT CHICKEN BROTH SO THAT IT KEEPS COOKING THE RICE AND DOESN’T COOL IT DOWN. AND KEEP STIRRING. THAT’S A PROCESS. IT TOOK LIKE A HALF HOUR. NOW, THE RICE, SQUEEZE IT LIKE THE CLAW IN THE ARCADE MACHINE. DUMP IT ALL IN THERE.

THERE YOU GO. PERFECT. TOSS IT IN. YOU GUYS JUST WANT TO DO THAT FIRST SO YOU CAN LICK THE CHEESE OFF YOUR HANDS? IT IS ALL OVER YOUR FACE. NOW WE’RE GOING TO MAKE THE SAUCE AND SERVE IT UP. SO THE SAUCE THAT THEY PUT ON

THIS RISOTTO IN THIS LITTLE RESTAURANT IN THE TOWN OF SICILY USED A SPECIAL CHEESE THAT YOU CAN ONLY GET IN SICILY. SO WE’RE GOING TO TRY TO RECREATE IT. SO I HAVE SOME SOUR CREAM IN HERE. I’M GOING TO ADJUST A LITTLE BIT OF TOMATO PASTE.

GONNA ADD A LITTLE BIT OF OLIVE OIL. I’M GOING TO DO A LITTLE PINCH OF SALT. LET’S PUT SOME BACON ON TOP. DO YOU THINK THAT MATCHES UP WITH THE ONE WE HAD IN ITALY? OKAY. YOU GET A LITTLE OF EVERYTHING WITH EACH BITE. WHAT DO YOU THINK?

WHERE CAL DOESN’T LOOK AS HAPPY AS THE REST OF YOU. >> WE TRIED TO SHOOT THESE WHEN THE BOYS ARE NAPPING, BUT OLLIE WOKE UP FROM A NAP, SO WE HAD TO INCLUDE HIM. OTHERWISE, HE WILL CRY. CAL WAS NOT THRILLING. >> IT’S DELICIOUS.
