What is Rosu?
When you see ロース on a Yakiniku menu in Japan, it does not refer to a single cut.
Rosu simply means loin.
Depending on the restaurant, it can come from Chuck Roll, Ribeye, or Striploin.
That is what makes it interesting.
Each restaurant defines it differently.
One Rosu might be heavily marbled and rich.
Another might be more structured and focused on flavor.
Same name. Completely different experience.
This one was taken from the eye of the Ribeye.
The center muscle, known for balance.
Clean texture. Fine marbling.
A direct expression of the beef when grilled simply.
