With the weather getting warmer, more people are taking their burgers to the riverside.
This one is made with Kirishima Wagyu.
The bacon is not pork.
It is made from Wagyu Brisket.
Cured in-house, then smoked until it reaches a soft, almost pull-apart texture.
The beef comes from Kirishima Ranch, located between Miyazaki and Kagoshima.
Manabe San oversees the entire process.
No antibiotics.
Natural spring water.
Feed enriched with flaxseed.
We first met the farm during a barbecue in 2021.
Since then, the relationship has grown into a long-term collaboration.
The farm originally produced only for its own restaurants and facilities, so supply remains limited.
You can take it to the river.
Or enjoy it fresh at the shop.
Either way, the story stays the same.
