


Really enjoying this recipe though I've upped the hydration 1-2% as previous efforts were coming out a touch dry.
Works really well for 14" pizzas – would be pushing it to get to 16" though that's probably my technique!
Galbani low moisture mozzarella and Mutti San Marzanos with a little salt, sugar and oregano, plus pecorino romano to finish.
