Boursin & cherry tomato pasta recipe 🍅
1/2 box rigatoni
1 pint cherry tomatoes (cut in 1/2)
1 box garlic & herb boursin cheese
1 lemon
1 pound fresh spinach
2 cloves garlic, chopped
1 tbsp olive oil
Salt & pepper to taste
Optional: red pepper flakes for garnish
-cook pasta in salted water until aldente, save 1/3rd cup pasta water
-sauté garlic in olive oil, add tomatoes & salt
-when tomatoes are jammy add in spinach until wilted
-mix in the Boursin, pasta water, & cooked pasta
-season to taste & serve with a squeeze of lemon 🍋
