I use mascarpone a lot, because I make a lot of tiramisù. That‘s what mascarpone is for, right? If you’re anything like me, the word “mascarpone” just means “that creamy stuff I need for tiramisù.”
Recently I learned that mascarpone was first invented in Italy in either the 16th or 17th century. Tiramisù, on the other hand, didn‘t grace the Italian culinary stage until the 1960’s at the earliest. So how the heck was mascarpone used for several hundred years? And what about now, do Italians only reach for the mascarpone when they’re whipping up dessert?
Hardly, as I learned when Eva showed me a few different ways to use this under-appreciated ingredient. The only rule for this video was: no tiramisù allowed.

Years of working in restaurants especially in the 90s, I've grown not to like tiramisu'. Recently I had it and I'm starting to appreciate it now…. I did have a relative of my wife in Sicily make mini cannoli with mascarpone instead of ricotta and they were great. I am definitely going to make the pasta with broccoli! I always look foward to your site every week. Thank you

Eva! When you revealed your Stracchino della Duchessa it was both beautiful and oh so elegant! Harper has his work cut out for him.
There is a dish from Firenze which is hot polenta served over mascarpone .. usually covered with porcini.
For anyone watching who, like Eva, is pregnant, you can get the rum flavour by heating some rum up to ~90-95c and setting light to it. Keep it on the heat until the flame self extinguishes, and then bring up to a brief boil for ~2 mins. This will remove 99.9% of the alcohol. Then let it cool and add it to the coffee. It's pretty simple.
And do remember, that, for example, freshly squeezed orange juice has some natural alcohol in the fruit anyway (as do most ripe fruits), and fresh OJ can often get up to 1-1.5% alcohol by volume after just 2-3 days in the fridge!
Personally, I think a half glass of wine topped up with some Pellegrino a couple of times a week is never going to harm your baby in any way, and expectant mothers need to feel at least some normality in their pregnancy!
I know 'Muricans get really puritanical about this sort of thing, but 1 unit of alcohol a week is essentially nothing. And remember, way into the 60s many doctors were advising worried mothers-to-be to relax by have a nice cup of coffee and a cigarette whenever they felt anxious!

FWIW, Italian meringue made with whole eggs instead of egg whites is called a pâte à bombe in France

So the first pasta, that seems pretty similar to a parma rosa – any meaningful difference there? And for the dessert, how do you avoid the eggs scrambling when you pour the hot syrup directly in?
We make a Dutch baby pancake with spinach and mushroom topping. Marscapone is in the batter and a little spread on top before the begs.
