Aubergine Parmigiana
Tasty Italian starter or main dish which can be served with garlic bread and salad.
Made with grilled aubergine, mozzarella and basil, topped with tomato sauce.
Ingredients used:
– 1x Large Aubergine
– 250g fresh mozzarella balls
– 200g Grated Mozzarella
– Mixed dried herbs
– Basil
– Jalapeno
– 800 ml Fresh tomato Sauce / Tinned Tomatoes
– Salt
– Sugar
– Black Pepper
