he didn't discover anithing, he just learned somenthing that a whole ass country already knew, i get that american cooking is pretty bad, but to not know that the fat from the guanciale is better rendered than burned is crazy, what's the next step? learning that the best way to make pasta al dente is to eait for the water to boil, put the salt, wait for it to boil again and then place the pasta? (since i'm pretty sure that y'all don't even wait for the water to start boiling properly i don't know if i should laugh or cry)
