For sauces like this I do like to dice up some yellow onion instead of using onion powder. It imparts some sweetness and takes the edge off the acidic bite of the sauce. I'll usually use 1/4 a medium yellow onion and fry it a bit before throwing in the garlic. A tablespoon of balsamic vinegar towards the end of the simmer also imparts a deep, rich color to the sauce and brings out the flavors of the herbs.
Mushroom seasoning is so expensive. I should’ve bought the big bag from my local Asian store for $28 instead I got a small shaker like yours for $10. Better be worth it 😭

I love making base tomato sauces like this in bulk, freezing them, and using them for other tomato sauces like vodka sauce and pizza sauce!
