Ingredients:
2 lb Yukon Gold potatoes, cubed
1 lb sweet Italian sausage, cut
1 cup Parmigiano Reggiano, grated
1 cup breadcrumbs
1 clove garlic, grated
Olive oil
Salt & black pepper
Directions:
1. Parboil the potatoes in salted water for about 8 minutes, then drain well.
2. Transfer the potatoes to a bowl and add the sausage, olive oil, Parmigiano Reggiano, breadcrumbs, grated garlic, salt, and pepper.
3.Toss everything until well coated.
4.Arrange on a parchment-lined baking sheet and drizzle with a little more olive oil.
5. Bake at 400°F for about 40 minutes, until golden and crispy.

Should you dry off the potatoes to keep them crispy?
It's great! Be careful with roasting the sausage. It needs only 25-30 minutes. 40 will dry them out.
