Ingredients:
1 lb thin chicken breast filets (lightly floured)
3 shallots, diced
1/2 lb shiitake mushrooms, sliced
1/2 lb champignon mushrooms, sliced
1 cup white wine
2 tbsp butter
2 tbsp olive oil
Fresh parsley
Salt and pepper
Instructions:
1. Heat olive oil in a large pan over medium heat. Add shallots and cook until soft.
2. Add mushrooms and cook until golden.
3. Pour in 1/2 cup white wine and let the alcohol cook out.
4. Add butter, then place in the chicken. Cook for about 1 minute per side, just to lightly brown.
5. Season with salt and pepper, then pour in the remaining 1/2 cup white wine.
6. Lower heat and let simmer for about 10 minutes, until the chicken is fully cooked and the sauce thickens.
7. Finish with fresh parsley.
