I can’t count the number of times I’ve watched this episode. It’s brilliant. Spent two months in Newfoundland in 2019. I’ll never look at that province and our country the same way again. Love the Jeremys, the Joe Beef guys and Bourdain. But especially Newfoundland (I’m from BC).

@3:45 they are talking about overfishing. Currently the chinese fishing fleet is something like 15000 vessels. More than the rest of the world combined. They are sweeping the sea clean. For example they will completely surround the Galapagos protected area and catch everything coming in or out. What Cs

Don’t throw fish around. It bruises just like meat but the flesh is soggy not discoloured. Dont wash fish under tap water. Wash it with sea water. When I see chefs washing fish in the kitchen I groan and think “doesn’t know f all about fish”.
