Phoenix’s dining scene is set to welcome a new Italian-inspired steakhouse in spring 2027. Bistecca & Bones Italian Chophouse, a new concept from the team behind Bourbon & Bones Chophouse|Bar, is coming to High Street at City North with a menu and atmosphere inspired by the traditions of Tuscany.
The restaurant will combine the premium cuts of steak and elevated hospitality associated with Bourbon & Bones with the flavors and traditions of a Florentine steakhouse. Fresh pasta made in-house daily will also be a centerpiece of the menu.

“In our recent travels, we were inspired, as many are, by some of the incomparable dining traditions of Italy, especially in Tuscany,” said Founder and CEO of Square One Concepts, S. Barrett Rinzler. “It was special for us to add to what we already know from Bourbon & Bones and create this concept. We are very excited about Bistecca & Bones and how it will resonate with our customers.”
There will be an extensive steak program, highlighted by the Bistecca Florentine, a 40-ounce porterhouse served flaming and sliced tableside. The menu will also feature seafood, with a display of fish and shellfish allowing guests to see the selections firsthand while showcasing the culinary team’s preparation techniques.
Encompassing approximately 7,500 square feet, the restaurant will include a bar and extensive wine collection. Its design will draw inspiration from Italian architecture, blending classic Tuscan character with contemporary chophouse style. Rich wood tones, natural stone, marble accents and layered lighting will create a warm, sophisticated atmosphere suited to everything from intimate dinners to celebratory evenings.
Bistecca & Bones will also offer a 2,200-square-foot private event space with room for up to 100 guests. The space is planned to accommodate celebrations, corporate gatherings and other private events. The restaurant is anticipated to open in spring 2027. Learn more at bisteccaandbones.com.
