
Not your ordinary pizza, I agree, but it tastes incredibly delicious. It includes corn, potatoes, parsley, black pepper, Sicilian sea salt, fior di latte, and mayonnaise. 👀
However, the 65% hydration level was a bit excessive for that flour. For those in Japan, this flour is LYS DOR. The pizza was made using KOJI for fermentation, but it was overproofed by a few hours, unfortunately.
