This Pasta e Piselli (Pasta with Peas) is pure nostalgia in a bowl. 🇮🇹 Whether it was just peas or with pancetta and potatoes, this was a staple in our Italian childhoods. The best part? It’s all made in ONE pan!

Ingredients:
8 oz tubetti pasta
8 oz frozen peas
8 oz pancetta, cubed
1 small onion, diced
4 cups boiling water (plus more if needed)
1/2 cup Parmigiano Reggiano, grated
Olive oil
Salt & pepper
Directions:
1. Add a drizzle of olive oil to a pan and cook the onion and pancetta over medium heat until the pancetta starts to render and lightly crisp.
2. Stir in the peas and let them cook for a few minutes to pick up all that flavor.
3. Pour in the water and let everything simmer for about 5–10 minutes. Season with salt and pepper.
4. Add the pasta directly into the pot and cook, stirring occasionally, until the pasta is tender. Add a splash of water if needed to keep it loose and creamy.
5. Turn off the heat and stir in the grated Parmigiano until it comes together into a creamy sauce.

  4. I made this tonight using leftover ham from Easter. Even though I can’t read directions and put the pasta in immediately after the hot water, I managed to save it and it was delicious. I will definitely make it again, and remember to simmer the veggies and prosciutto first! What a simple but delicious quick dinner! Thanks G!!
