Todd switches things up in Florida by making smashed Italian sausage sandwiches on the griddle, using the new Blackstone smash burger press. He builds them on toasted brioche buns with lemon herb mayo, fresh basil, melted mozzarella, and tomato for a fresh, flavorful bite. The result is a crispy, juicy sandwich that proves smashburgers are not just for beef.

Ingredients
Cooking oil
12 oz mild Italian sausage
1 cup mayonnaise
1 lemon, halved
Salt, to taste
Blackstone Tuscan Herb seasoning, to taste
4 brioche buns
4 slices whole milk mozzarella cheese
Fresh basil, sliced
8 tomato slices
Directions
1. Preheat your Blackstone griddle to high heat and lightly drizzle with cooking oil.
2. Divide the sausage into 4 loose balls (about 3 ounces each), place them on the griddle, and press them flat with a burger press. Cook until the first side is well-seared, then flip and cook through.
3. While the sausage cooks, mix the mayonnaise with freshly squeezed lemon juice, salt, and Blackstone Tuscan Herb seasoning to taste.
4. Spread the lemon mayo on the inside of each brioche bun and place them cut-side down on the griddle. Toast until lightly browned, then remove.
5. Top each sausage patty with sliced basil and mozzarella. Add a small splash of water to the griddle and cover with a lid or basting dome to help melt the cheese.
6. To assemble, spread lemon mayo on the bottom bun, add a sausage patty, and top with two slices of tomato. Add a little more lemon mayo and a sprinkle of Tuscan Herb seasoning, then place the top bun on and serve.

Silicone thing sticks to the meat! Parchment paper works just fine. I like sausage and ground beef 30-70%, same as meatballs and spaghetti sauce.

Awesome will have to try them this way. At my church bazaar back in Denver they would do a simple smash Italian sausage burger with provolone and a slice of hot green chile. Soo good. Of course this was before blackstone. Now We make them ourselves, and dunk them in raos marinara. ๐คค
