This viral ricotta stuffed raviolo is one of San Francisco’s most iconic dishes and is the brainchild of Chef @michaeltusk.

Chef Michael is the executive chef at the three Michelin star restaurant Quince and its more accessible Italian restaurant next door, Cotogna.

This raviolo masterpiece is a 4.5 x 4.5 inch, 1 millimeter thick ravioli stuffed with a golden egg yolk on a bed of creamy ricotta. While it may sound simple, the technique is incredibly difficult to master. What more, once broken, the oozing egg yolk has one of the richest flavors comparable to a jidori egg yolk.

  1. We tried making this once. Didn’t turn out quite as good as a big restaurant but was still good! Definitely a creative idea! 😁😋
