Need suggestion on Dough constantly for Pasta from excavator.


Today is the first day I tried to make Pasta from scratch and didn’t quite turn out as I would have liked. I used a 00 flour and the flour consistency looked fine. The problem was when I used the excavator from a stand mixer machine I use. It’s made of metal so heats up and ends up making the pasta extraction sticky. How can I get about this? Am I better off to use semolina flour instead? Would it make any difference?

Any tips/suggestions welcome. I have attached a picture of how the pasta excavator looks like (the one in the picture is for meat but process is similar, you shove the dough from top and it comes out from the front holes)
