Whip up this incredibly tasty pistachio pesto pasta in a flash – perfect for busy weeknights AND chill weekends!
Ingredients:
Pasta
Pistachios
Oil
Parmesan cheese
Garlic
Mozzarella or burrata
Instructions:
Cook the pasta according to the package directions.
In a blender, add the pistachios, oil, parmesan and garlic. Process until smooth.
Pour the cooked pasta into a frying pan, then pour over the pistachio pesto cream and mix well. Let everything warm up a bit.
Arrange on a plate. Sprinkle the mozzarella pieces over the pasta, sprinkle with some crushed pistachios on top.
