BEETROOT COUSCOUS (SERVES 4)

Ingredients
• 1 cup couscous
• 1 cup hot water or vegetable stock
• 1 tbsp olive oil
• ½ tsp salt
• 1 medium cooked beetroot (200 g), diced
• 1 celery stalk, finely sliced
• 2 spring onions
• ½ bunch parsley
• ¼ bunch dill
• ½ cup walnuts

Dressing
• 4 tbsp olive oil
• 2 tbsp lemon juice
• 1 tbsp balsamic vinegar
• 1 tsp orange zest
• ½ tsp lemon zest
• ½ tsp salt
