What's so big about aging alcoholic beverages generally (we do that in Poland with beer in the Baltic Sea), is that it supposedly brings notes and aromas not present during typical aging. The movement of the bottles due to the currents supposedly ages it differently. The temperature and the amount of sunlight depending on the depth does magic for the taste. Plus, obviously, the presentation is also nice.
