Today’s video is about sharing a mushroom risotto. An Italian rice dish that so creamy and delicious you will instantly fall in love with this recipe. We first got introduced to this mushroom risotto when we visited Italy few years ago. And we would grab every opportunity to order this when we visited other countries in Europe. Preparing this dish takes about 1 hr if you have to make it on stove pot. You don’t have to baby sit when preparing mushroom risotto in instant pot and can be prepared under 20 min. I am happy to share this recipe and the texture/color/taste comes close to what we had in europe.

Ingredients:
2 1/2 cups of Arborio Rice
4 cups of Mushrooms (Cremini/button)
1 cup yellow/white diced onion
2 tbsp minced garlic
1 tbsp black pepper powder
1 tsp red chilli flakes (optional)
1 tbsp olive oil
1 tbsp butter
6 cups of water/broth
2 tbsp parsley
2 tbsp parmesan cheese
salt to taste

Directions:
In an instant pot, add oil and butter. Saute garlic, followed by onion and spices. After few minutes, add mushrooms and saute mushrooms by adding little bit of salt. Later add italian rice, add water, add salt to taste and cook in instant pot. Garnish the mushroom risotto with parsley, parmesan cheese, and with black pepper. I have not used Wine in my recipe although mushroom risotto uses wine. Please feel free to use it if you prefer to add wine. Enjoy!!
