Pantelleria is a small volcanic island closer to Tunisia than to Sicily. Hot springs break through the ground here. Fumaroles vent steam from the hillsides. And somehow, in that inhospitable heat, a single indigenous grape, Zibibbo, makes one of Italy’s most extraordinary wines.
Passito di Pantelleria is a dessert wine made from grapes that have been left on the vine, then dried on mats in the sun until they’re concentrated into something almost syrupy. It tastes like dried apricot and orange peel and warm stone, and almost nobody outside Italy has heard of it.
The vines are trained low to the ground, a method called alberello pantesco, to shelter them from the African wind. It’s one of the few viticulture techniques recognized by UNESCO.
