Bolognese is a rich, slow-cooked Italian meat sauce originating from Bologna, traditionally featuring ground beef/pork/chicken, soffritto (onion, celery, carrot), wine, milk, and minimal tomato

Basic Method :

Sautรฉ: Sautรฉ 1 finely diced onion, 1 carrot, and 1 celery stalk in olive oil/butter until tender.

Brown Meat: Add 1 lb ground meat, breaking it up and browning well.

Deglaze: Pour in cup dry wine and simmer until evaporated.

Simmer: Stir in 2 cups tomato purรฉe (passata), 2 tbsp tomato paste, and salt/pepper. Simmer low-covered for 2-3 hours, stirring occasionally.

Finish: Stir in cup milk or cream and cook for another 30 minutes.
