I grew up Jewish and Catholic Italian and when we went to Nonna's she made this sometimes after church. She used meatballs, sausage and porkchops. She would cook it the night before and let it sit in the fridge overnight. The flavor is barnone out of this world especially after it marinates.

Brown the meat in olive oil paisan. Lard? No. You left out the garlic.

Iโm not sure cooking the raw sausage
in the sauce is the healthiest way to
goโฆbrowning the sausage and rendering
out the fat works well and then you can
control the amount of fat thatโs in there.
