Chicken
โ€ข 2 chicken breasts (about 300โ€“350 g)
โ€ข 1 tsp salt
โ€ข ยฝ tsp black pepper
โ€ข 1 tbsp olive oil
โ€ข 1 tbsp butter
โ€ข 1 sprig rosemary
โ€ข 3 tbsp tomato paste
โ€ข 2 sheets or 1/2 cup cheese (mozzarella or mix)

Pasta
โ€ข 180โ€“200 g spaghetti
โ€ข Water + 1 tbsp salt
โ€ข 1 tsp oil

Pasta Sauce
โ€ข 1 tbsp butter
โ€ข 2 garlic cloves (finely chopped)
โ€ข 1 small shallot (finely chopped)
โ€ข ยผ cup white wine
โ€ข ยฝ cup reserved pasta water (use as needed)
โ€ข ยฝ cup grated parmesan cheese
โ€ข Salt & pepper to taste

1๏ธโƒฃ Season chicken with salt & pepper.
2๏ธโƒฃ Heat olive oil + butter in a pan, add rosemary.
3๏ธโƒฃ Pan-sear chicken on medium heat until golden and cooked (4โ€“5 min per side). Remove.

4๏ธโƒฃ Cook spaghetti in salted water with oil until al dente. Reserve pasta water.

5๏ธโƒฃ In the same pan, add butter, garlic & shallots. Sautรฉ 30โ€“40 seconds.
6๏ธโƒฃ Deglaze with white wine. Cook 1โ€“2 minutes until slightly reduced.
7๏ธโƒฃ Add pasta, parmesan & pasta water. Toss until creamy. Adjust seasoning.

8๏ธโƒฃ Slice chicken. Place in baking tray.
9๏ธโƒฃ Spread tomato paste, add cheese.
๐Ÿ”Ÿ Bake at 200ยฐC (400ยฐF) for 8โ€“10 minutes until melted & lightly golden.

1๏ธโƒฃ1๏ธโƒฃ Plate pasta, top with baked chicken. Serve hot.
