Between Number 2 and 3 pizza was just like the one my Sicilian ma made but hers was double that thinkness like a italian bread
How did you decide to make the sfincione at 60% hydration, instead of using more water?
Thank You Eva now I can try and make my Mom's Sicilain bread pizza.The only thing missing is the cubes of cheese she put inside the pizza.Sicilians really know how to make a pizza.
