CUMIN LAMB (Biang Biang) NOODLES:
2tbs cumin
1/2tbs coriander
1tsp chile flakes (chinese or korean)
1/2tsp cinnamon
1/2tsp garlic powder
1/2tsp ginger powder
2/3c lamb (pieces or ground)
BIANG BIANG NOODLES
200g all purpose flour
110g water
7g salt
– mix together and knead for 13-15 minutes.
– it will be very smooth and should be stretchy
– rest for 20 minutes
– flatten it out into a very flat rectangle and cut into 2-3 inch strips
– put on a tray and spray with oil, rest for 20 minutes
– pinch the ends, stretch it a little, and slap it out on the table
– drop in salted boiling water
– it’s done when it floats, drain and rest with a splash of oil
– sear the lamb until 80% cooked and most the fat is rendered
– sear the noodles on one side, add the spices and enjoy (;
