For the dough:
2 cups whole wheat flour
baker’s yeast
a pinch of salt
For the topping:
5 ripe tomatoes (medium size, cut 1 cm thick)
6 medium white button mushrooms (cut 1 cm thick)
2 tbsp sweet red pepper flakes (sweet paprika)
2 tbsp of olive oil
a pinch of mint (dry or fresh)
a pinch of oregano
10 salt-preserved/fermented black olives
2 bay leaves
salt and black pepper to taste
For final topping:
3 cloves of garlic (minced)
10-15 fresh basil leaves (wild or regular)
Steps:
Mix the dough ingredients, knead the dough and set it aside for at least 30 minutes in a warm place. Spread the dough thinly on an oiled or floured baking tray; or use baking paper to prevent sticking. Add 1 tbsp of olive oil and spread on the dough. Add all of the toppings (except final toppings) and make sure to add the 2 bay leaves on top. Drizzle with 1 tbsp of olive oil. Cook in a pre-heated oven at 200 oCelsius until the toppings stop releasing water. Take out from the oven, remove the bay leaves and add the final toppings.
Serve warm, as tomatoes taste best when they are just cooked and warm. Bon appetit!
