Iโ€™m traveling in Italy and had so many good pasta while in Rome. So when I arrived in Positano, I had to recreate my favorite: carbonara.

I only used the freshest ingredients right from the local market in Positano. You only need guanciale, egg yolks, pecorino, freshly cracked black pepper, pasta water, and fresh pasta.

Simple and delicious.
