
Been working on pizza doughs for a while, have done tonnes of testing on ratios and like where im getting with it. Fyi – 62% Hydration, 3% salt, this recipe was .5g idy/kilo
Anyway doughs nice, I really struggle to nail the cooking, to get it looking nice like this the dough is often a touch undercooked and if its cooked through properly the tops a bit burnt.
I heat to 400deg c ish and have the flame on low and pizza as far from the flame as I can
Not sure if its my knockabout pizza oven, nothing fancy- gas powered but quite small area
Anyone else had this issue?

Only thing I can think of is are you letting the stone get up to at least 900 before launching?
