These vegan ‘cheese’ stuffed shells taste as rich and decadent as if they were filled with full-fat herbed ricotta. Instead, our ‘Rinotta’ (NOT ricotta) is a delicious, nutrient-dense blend of white beans, tofu, nutritional yeast, garlic, and Italian herbs. This versatile filling is also perfect for manicotti tubes or a classic lasagna.
This wonderful recipe is from Plantstrong and was created by Ami Mackey. It is incredibly delicious, entirely vegan, and gluten-free. The sauce preparation is as quick and easy as opening a jar, while the final dish offers a spectacular blend of creamy ‘cheese’, perfectly al dente pasta, and a richly flavored Italian-seasoned tomato sauce.
