One of the world’s oldest blue cheeses is Gorgonzola, which originated in the town of Gorgonzola.
Historical records trace this cheese back to around the year 879 AD, making it one of the oldest continuously produced blue cheeses in history.
Its distinctive blue-green veins come from the mold Penicillium, which develops during the aging process and gives the cheese its unique flavor and creamy texture.
Today, Gorgonzola remains a famous product of Italy and is enjoyed worldwide.

The french "Fourme d'Ambert" is the oldest blue cheese, that can be traced back to VIIIth century. There are written traces as the cheese was used to pay taxes to the overlords of Ambert and La Chaulme in the Auvergne region.
