Immigrants are what make America great! Growing up as a child of immigrants is an experience I share with many people. And eating the foods of my fellow first-, second-, and third-generation friends was an absolute pleasure in my Connecticut hometown. It wasn’t difficult to fall in love with all the international foods I had available at my fingertips. But one simple pasta dish left an impression on me, and that was buttered noodles sprinkled with parmesan cheese. I first experienced this dish at my Italian-American friend’s house, and it was love at first bite. Here I take this simplest of simple recipes and add a drizzle of good extra virgin olive oil and a big pinch of parsley. It’s so good, so comforting, and it recalls so many fond memories from my childhood. Enjoy!

100 grams egg noodles
1 pat unsalted butter
Drizzle of olive oil
3 tablespoons grated parmesan cheese
1 tablespoon chopped parsley
