Aw, my favorite one is the mrshroom pasta with the burrata on top. Or the salmon pasta with mascarpone. Honestly too many great recipes on this channel.

One of my favorite recipes of yours is Pasta alla Buttera.
When you were cooking the pasta with chicken peas I though what if you was to add just a little Nduja to spice up the sauce. I liked it as it was but to add a little heat the Nduja.
I like you videos you make it look so easy it give some the confidence to say I can make it then they do and they are amazed that they could, but it those little tips and suggestions along the way in the videos that make it happen. And when you add Nona and you wife, it adds the realistic family homemade to it and aging the confidence I can do it for my family.

I know bastardizing Italian cuisine is very controversial, but I’d like to know. What’s an Italian-American dish you enjoy, if any?
The pesto looks good, but blending olive oil makes it bitter. It's ok to stir it in afterwards, or use a mortar and pestle. Also, if it contains cheese, it's not vegan. My daughter cannot have dairy (allergy), so I look for vegan recipes for her.
I like your channel, but mate your wife needs to be the host of all your videos. She did a fantastic job with the gnocchi video! She clearly has a talent for it!

This person in this clip must be an impostor impersonating Vincenzo. If there ever was "Vicenzo's Plate Sauce" it would be with heaps of pecorino included.
Cherry tomato pasta & Vincenzo's meatballs need to be in there. I make the meatballs all the time & everyone swears they're the best they've ever had. I make the cherry tomato fresh from my garden. Amazing! Everyone says it's better than a restaurant. And we have good restaurants here in NYC. The pecorino & mascarpone 🔥🔥
Can you show us how you make farinata? Tried someone else’s recipe, and it had few weak points, need a better one. Your recipes seem to be fail proof.

A lot of Italian dishes don’t appear to have meat/ fish in them – is that the norm for a Mediterranean diet? 🤔

I can not eat shrimp, is there a reasonable substitution. Like would pollock work as all?? It is often used in making Surimi, fake crab and shrimp. Dungeness and King Crabs are the most common here, but I can get other ones at H Mart or similar stores. Pollock is everywhere here.
Make sure you ONLY buy organic lemons if zesting in the US.
Is Tubetti close enough? Even fresh bay leaves should be removed even though they are much softer. More Pecorino please.

Vincenco I love your videos but the chickpea dish was neither vegan or vegetarian. Cheese is not vegan, and Pecorino has rennet so is not vegetarian. Please do better for us.
Vincenzo. I love all your videos and have been a loyal subscriber for some time. I have been making Gnocchi your Nona's way for years until I saw Chef Jean-Pierre make them with baked potatoes and very little kneading. They do come out much, much lighter and fluffier. I'd like you to visit his channel and let us know what you think of his gnocchi.
