
Pasta:
50/50 whole wheat/AP
5 eggs
Salt
1/4 water or until right consistency
Rolled and cut with kitchen aid pasta maker
Salted water for boiling
Sauce:
1 cup freshly grated parm
1 cup freshly grated pecorino Romano
8 oz guanciale
8 eggs (I used whole bc… I don’t want to deal w egg whites)
Pasta water
Shit load of pepper
Mix cooked hot pasta in pan with cooked guanciale, mix with cheese and egg mixture.
