    63% hydration, 95% Caputo classica blue, 5% whole wheat, 2.5% olive oil, 2.5% salt. 24 hours bulk at 19 degrees, 24 hours ball at 4 degrees. 6 hours at 19.

    San Marzano with salt, pepperoni, mozz, dusted with Reggiano.

    Really delicious.
