serves 4 or six – 2 points each
1/2 chopped onion , saute in skillet spray
pinch of salt. cook until soft
add 1 can with juice, 1 tsp. garlic powder, salt & pepper to taste
cook until the juice has reduced
whisk 4 eggs, 1 oz. Parmesan cheese ( save a little to sprinkle on top)
1 tsp. parsley ( fresh, or dried)
turn up the heat add the egg mixture, cook until done ( soft or harder)
Sprinkle with cheese. Enjoy!
