Crispy Chicken Parmesan

Ingredients

Chicken

* 2 chicken breasts
* Salt, pepper, garlic powder & Italian seasoning
* Oil for frying

3-Bowl Breading

* Flour
* 2 beaten eggs
* Panko + grated Parmesan
* Garlic & onion powder for all 3 bowls

Sauce

* Homemade spaghetti sauce or jarred sauce (Rao’s preferred)
* Salt, pepper, garlic powder, onion powder & Italian seasoning
* Parmesan
* Splash of heavy cream

Topping

* Provolone, mozzarella & Parmesan

Serve With

* Spaghetti or angel hair
* Your favorite green

Directions

1. Prep the chicken.
Butterfly 2 chicken breasts, cover with plastic wrap and pound thin. Season both sides with salt, pepper, garlic powder and Italian seasoning.

2. Bread it.
Set up 3 bowls: flour, beaten eggs, and Panko + Parmesan. Season all three with garlic and onion powder. Coat chicken in flour → egg → Panko mixture.

3. Fry it.
Fry in hot oil until golden, crispy and cooked through. Transfer to a wire rack to rest.

4. Make the sauce.
Use your homemade spaghetti sauce or your favorite jarred sauce. Season with salt, pepper, garlic powder, onion powder, Italian seasoning, Parmesan and a splash of heavy cream. Set a little sauce aside for your pasta.

5. Get it cheesy.
Pour the remaining sauce into an oven-safe pan. Top with provolone, mozzarella and Parmesan. Broil on HIGH until bubbly and golden brown.

6. Put it together.
Spoon the hot, cheesy sauce over your crispy chicken. Toss spaghetti or angel hair with the reserved sauce, add your favorite green, and voilà—Chicken Parmesan!
