In her second pregnancy, Alex Drummond has had highly specific cravings: Caesar salads, fruit popsicles, and hearty sub salads, among others. So when Alex had a hankering for a big stack of pancakes over the weekend, she indulged in her all-time favorite pancake recipe. “Woke up thinking about pancakes, so I made pancakes 😍,” Alex shared with her Instagram followers.

To exceed her pancake needs, Alex called on a longtime Drummond family staple: Edna Mae’s sour cream pancakes. Alex’s mom, Ree Drummond, adopted the recipe from her husband’s late grandmother, Edna Mae. “I love this recipe so much, I put it in my first cookbook,” Ree admitted at the time. “It’s turned out to be one of the most-enjoyed recipes in the book.” Since then, the breakfast dish has been a highly cherished go-to in the Drummond household.

When Alex whipped up Edna Mae’s beloved breakfast dish this past weekend, she called it the “best pancake recipe in the 🌎.” Based on the drool-worthy photos she posted on Instagram, it’s easy to see why she awarded them that prestigious title! After Alex flipped the flapjacks on a skillet, she captured the gloriously fluffy hotcakes transforming into golden-brown delights. And once they were ready to eat, she drenched them in sticky-sweet maple syrup. “Safe to say they hit the spot,” Alex said.

Not only are these pancakes light, tender, and downright delicious, but they’re also so easy to make! You’ll just need 20 minutes and a few simple ingredients to make this recipe. In fact, there are a few unexpected twists, such as sour cream for a subtle tang and an ultra moist consistency, plus just seven tablespoons of flour to achieve that irresistibly fluffy texture.

Since these pancakes will keep for up to three days in the fridge and three months in the freezer, they’re the perfect make-ahead breakfast for busy school mornings. Just pop them in the oven or microwave before digging in!
