– [ ] 2 tbsp olive oil
– [ ] Half of a large onion diced
– [ ] 3 cloves of minced garlic
– [ ] Salt and pepper to taste
– [ ] 1 can of tomato paste (6oz)
– [ ] 2 shots of vodka
– [ ] 1 box of rigatoni pasta
– [ ] 1 & 1/2 cup heavy cream (warmed up)
– [ ] 1 tsp Italian seasoning
– [ ] 1 tsp red pepper flakes
– [ ] About 1 cup of pasta water
– [ ] 1/2 cup grated Parmesan cheese
Instructions:
In a large pan over medium heat add your olive oil. Then add in your diced onion and sauté for about 2 minutes or until translucent. Then add in your minced garlic and sauté until the onions are starting to brown a bit. Add some salt and give it a mix. Then add your can of tomato pasta and pepper flakes(I didn’t have any pepper flakes so I added a pinch of slap yo mama)and give it a stir until nicely combined. Then add in your two shots of vodka (the alcohol cooks out) and give it a whisk until well blended. Let your mixture sit for about 2 minutes until slightly darkened in color. While you wait start boiling your pasta (make sure to save some pasta water). Heat up your heavy cream for about 1 minute to reach the same temp as your sauce. Then pour in the heavy cream and give it a stir until completely combined. Add in your Italian seasoning and more salt and pepper to taste. Then freshly gate some Parmesan cheese and mix. The mixture will thicken so add in some pasta water to your desired consistency and give it a whisk. Add in your cooked pasta and top it off with more Parmesan cheese. Serve and enjoy!🍝
