Aglio e Olio is often misunderstood as one of the simplest pasta dishes—but simplicity doesn’t mean there’s no room for technique.
In this recipe, I haven’t added a single new ingredient. Instead, I’ve taken the same eight classic ingredients and used each of them in multiple ways to build layers of flavour, aroma and texture. Garlic alone appears four different ways: as a raw garlic emulsion for bold pungency, gently warmed to mellow its sharpness, fried into crispy garlic chips for texture, and infused into the cooking oil itself. Parsley is used three different ways, chilli is split between raw and bloomed, and whole black pepper is toasted before crushing. The result is still unmistakably Aglio e Olio—just reimagined through technique rather than extra ingredients.

🍝 INGREDIENTS (Serves 2)
• 200g spaghetti
• 10 garlic cloves (3 thinly sliced + 7 raw)
• ~120ml extra virgin olive oil (divided)
• 1–1½ tsp chilli flakes (divided)
• ~40g fresh parsley (divided)
• 1 tsp whole black peppercorns
• Salt (15g per litre of pasta water + ¼ tsp for emulsion)
• ~1½ cups reserved pasta water

👨🍳 METHOD
Start by bringing a large pot of water to a boil and salt it generously (about 15g salt per litre of water). Starting this first saves time while you prepare the remaining components.
Blanch 15g parsley for 10 seconds, immediately transfer it to ice water, squeeze it completely dry, then blend with 40ml olive oil until smooth. Strain to create a vibrant green parsley oil. Blanching prevents oxidation, keeping the oil bright green instead of turning brown.
Blanch another 15g parsley, shock in ice water and squeeze dry. Blend it with 7 raw garlic cloves, 50–60ml olive oil, about 1 tsp chilli flakes, and ¼ tsp salt to create a loose garlic emulsion. Blending maximizes allicin production, giving the dish a much bolder garlic flavor than traditional sliced garlic alone.
Toast 1 tsp whole black peppercorns in a dry pan for 60–90 seconds, then coarsely crush them. Toasting releases essential oils and produces a deeper aroma than freshly cracked pepper alone.
Heat 30ml olive oil over low-medium heat and gently fry 3 thinly sliced garlic cloves until deeply golden and crisp. Remove the garlic chips and reserve both the chips and the garlic-infused oil. Bloom the remaining ½ tsp chili flakes in this warm oil for 10–15 seconds to extract a deeper, rounder chili flavor.
Pour the garlic emulsion into the same pan and warm it over very low heat, stirring constantly for only 60–90 seconds. This is the most critical step of the recipe. The goal is not to cook the garlic—it is simply to remove its harsh raw edge while preserving its fresh pungency. If the garlic starts sizzling or browning, the heat is too high and bitterness will develop.
Cook the spaghetti 1–2 minutes shy of al dente, reserving about 1½ cups of the pasta water before draining. Add the pasta directly to the warmed emulsion and toss continuously, adding reserved pasta water a little at a time until the sauce becomes glossy and perfectly coats every strand. The starch from the pasta water naturally emulsifies with the olive oil, creating a silky sauce without butter or cream.
Remove from the heat and fold in the remaining 10g fresh chopped parsley. Plate immediately, drizzle over the parsley oil, top with the crispy garlic chips and finish with the toasted cracked black pepper. Adding these at the very end preserves their individual textures and aromas.
