Emma is trying one of Puglia’s best-known traditional dishes: orecchiette alle cime di rapa.

This simple but iconic recipe combines handmade orecchiette pasta with turnip greens, garlic, olive oil and anchovies. The crispy toasted breadcrumbs on top, known as pangrattato, were traditionally used instead of Parmesan, adding both texture and flavour.

It’s amazing how a few simple ingredients can tell the story of a region.
